Ingredients
1 lb. large raw shrimp (tail on), peeled and de-veined
3/4 cup Caribbean Mango Tequila Sauce
Fresh parsley
1 lime
4-6 long wooden skewers
Instructions
Soak skewers in a shallow pan of water for 10 minutes to avoid burning. Preheat grill (or broiler).
Thread shrimp on skewers. Brush 1/2 cup of sauce over the skewers. Place skewers on a grill that has been brushed with oil and preheated to medium heat. Cook and turn after 2 minutes. Baste again and cook 2-3 minutes or until cooked through. Place on a platter with lime wedges and sprinkle with fresh parsley, to taste. Serve with reserved 1/4 cup of sauce.
You could also place shrimp on a on a broiler pan coated with non-stick spray and cook under the broiler in the oven.
